Everything Baked Potatoes
You can make a meal out of these loaded baked potatoes.
4 tsp. olive oil
2 tsp. salt
4 tsp. Rockview® Butter, softened
1 pinch freshly ground black pepper
1 cup shredded cheddar cheese
1/2 cup Lilly Fat Free Sour Cream
4 Tbsp crumbled bacon
4 Tbsp chopped salami
4 Tbsp roasted red peppers, chopped
2 green onions, chopped
1 avocado, chopped
Preheat oven to 300° F. Scrub each potato, and pierce skin on all sides with a fork. Rub with olive oil and salt. Place the potatoes in the oven for about 90 minutes (should be soft and golden brown). While the potatoes cook, combine the butter, shredded cheese, and sour cream, and set aside.
Remove potatoes from oven, and slice each one down the center. Top with the cheese blend, followed by the remaining toppings. Serve immediately.
