Low Fat Buttermilk Pancakes

To make delicious gluten-free buttermilk pancakes, simply substitute your favorite gluten-free flour blend.

Servings: Yield: about 15 pancakes
Prep Time: 20 min.
Ingredients 1 1/2 cups all-purpose flour or gluten-free flour blend
3 Tbsp light brown sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1 1/2 cups Rockview® Low Fat Buttermilk
1 egg
1 egg white
1 Tbsp applesauce
1 tsp. real vanilla extract

Heat a dash of oil in a nonstick frying pan or electric griddle over medium heat. In a large bowl, thoroughly combine flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Set aside. In a different bowl, whisk together the applesauce, Rockview® Low Fat Buttermilk, vanilla, and eggs. Whisk wet ingredients into flour mixture. Use about 1/4 cup of batter for each pancake, cooking until the batter begins to bubble and the sides of the pancake appear dry. Flip the pancake and cook for about 3–4 more minutes.
