Green Chicken Chili
A green chicken chili recipe topped with Lilly Sour Cream. Absolute perfection.
1 Tbsp oil
1 medium jalapeño pepper, minced
2 medium poblano peppers, minced
1 large onion, chopped
4 garlic cloves, minced
Salt and pepper to taste
1 Tbsp ground cumin
1 1/2 tsp. ground coriander
1 tsp. chili powder
4 cups chicken broth
4 Tbsp lime juice
1 rotisserie chicken, shredded
1/4 cup chopped cilantro
Lilly Sour Cream
Drain both cans of beans. Mash one can until slightly chunky. Set these beans and the can of whole beans aside.
Heat the canola oil in a frying pan over medium-high heat, and sauté the peppers, onions, and garlic for about 5 minutes. Season with salt and pepper, to taste. Add cumin, coriander, and chili powder and sauté for one minute to toast the spices. Add the chicken stock and lime juice, and bring to a simmer. Add the beans and simmer for 20 more minutes.
Next, add the shredded rotisserie chicken and cilantro, and simmer for about 5 more minutes. Serve topped with Lilly Sour Cream.
