Lazy Day Cake
This recipe goes back to the 1950s, but it’s still one of our favorites today.
1 cup sugar
1 tsp. vanilla
1 tsp. baking powder
1 cup flour (or gluten-free flour blend)
1/2 cup Rockview® Milk
1 tsp. Rockview® Butter
3 tsp. Rockview® Butter
2 tsp. Rockview® Heavy Cream
5 tsp. brown sugar
1/2 cup shredded coconut
Preheat oven to 350°F, and grease a 9-inch cake pan. Beat eggs until thick. Add sugar, vanilla, baking powder, and flour. Stirring constantly, heat milk and butter to boiling and add to dry mixture. Pour into pan and bake for 30 minutes.
Combine all ingredients and boil for 5 minutes. Pour over baked cake and place in broiler until brown. Serve cooled with whipped cream.
